Yummy Vegan Recipes Inspired By Valentine’s Day

With Valentine’s Day less than 24 hours away, it might be time to start figuring out your plans if you haven’t already. Some couples prefer to do the traditional out-on-the-town wine and dine scenario at a restaurant, but if you don’t fancy waiting for a reservation you might prefer to cook from home.

From aperitif to main to dessert, here are some delicious vegan recipes to impress your other half.

Starter

Cauliflower Steak in Cheese Gravy

A bit of fancy way of saying cauliflower cheese, but remember! You’re impressing tonight.

Recipe

Ingredients

  • 1 large head of cauliflower
  • 100g of your favourite vegan cheese
  • ¼ cup of extra virgin olive oil
  • ¾ of garlic salt
  • 1 onion (finely chopped)
  • ½ teaspoon of salt
  • ¼ teaspoon of pepper

Method 

  1. Cut the cauliflower until they are separated into at least ten large florets, making sure to cut off the very bottom of the stem. Wash and then steam the cauliflower for approximately five minutes.
  2. While the cauliflower is steaming, prep your garnishes. Put your oil in a pan at low heat and gently simmer along with your chopped onion and garlic salt.
  3. Once your cauliflower’s five minutes is up, place the florets into your simmering oil and slowly stir on low heat for a further minute.
  4. Now you can add your cauliflower to the oven! Preheat your oven to 200°C. Line a baking tray with non-stick paper and place your florets in. Dust your salt and pepper on the top and, most importantly, add your cheese.
  5. Leave your cauliflower in the oven for 30 minutes until golden brown and voila! Fancy cauliflower cheese.

 

Main Course

Romantic Spag Bol

What better time than Valentine’s Day to recreate the iconic Lady and the Tramp scene with a plate of spaghetti? At least, that’s our vision. This is a great main course to add to the ambience of your night.

Recipe

Ingredients

  • A pack of wholegrain spaghetti (or maybe you prefer courgette noodles)
  • 28 ounces of tomato sauce or diced tomatoes
  • 1 tablespoon of extra virgin olive oil
  • 3 cloves of garlic (finely chopped)
  • 8 ounces of common mushrooms (sliced)*
  • ½ cup of chopped parsley
  • ½ teaspoon of ground black pepper
  • Pinch of salt
  • *optional

 Method

  1. Pour your tomato sauce or chunks into a large pan on medium heat (not enough to cause the cause to bubble) and add your oil, garlic, mushrooms, pepper and parsley. Stir the mix gently as it simmers.
  2. As you are prepping your sauce, bring another pan to boil and add your spaghetti, adhering to the package instructions.
  3. Turn your sauce’s heat to low and allow the spaghetti to cook through. Drain the spaghetti and place within your sauce.
  4. Mix the two until you are satisfied with the temperature of the dish.
  5. Serve immediately or add the additional salt or a quick dash of olive oil.

Huski Hint: This dish goes perfectly with fresh ciabatta bread!

 

Dessert

Angelic Hot Cocoa

The idea of Valentine’s Day in the first place is just to enjoy spending time with the person that you care about. Think about the two of you snuggled under a cosy blanket, watching the TV or simply chatting with a cup of yummy hot chocolate clasped in your hands. Perfection!

Recipe 

Ingredients

  • 2 large packs of chopped vegan milk chocolate
  • 3 tbsp cocoa butter (vegan of course!)
  • ¼ cacao powder
  • 2 cups of coconut milk (or almond milk)
  • ½ tsp of ground cinnamon
  • 1 tsp of maca powder
  • Crushed
  • A pinch of sea salt
  • Freeze dried cranberry powder*
  • Coconut cream*
  • *optional

Method 

  1.  Melt your chopped chocolate in a saucepan on medium heat and add your cocoa butter, cacao powder, maca powder, cinnamon and milk. Allow the butter to melt and the powders to fully dissolve before moving onto the next step.
  2.  Pour the mixture into two cups and add in a pinch of sea salt to each. You can add coconut cream or dust with your freeze-dried cranberry powder if you prefer.
  3.  And there it is, two quick and easy hot chocolates for you and your special person to share.
